Ingredients
  • Whole wheat flour- 250 g
  • Baking Powder- 1/2 tsp
  • Water- 1/2 cup
  • Curd- 2 tbsp
  • Ghee- 3 tsp + variable amount for roasting
  • Sesame seeds- 2 tbsp
  • Garam Masala Powder- 1/2 tsp
  • Amchoor Powder- 1/2 tsp
  • Red Chilli Powder- 1/2 tsp
  • Kasuri Methi- 1 tsp
  • Salt- 1 tsp
  • Potatoes - 1 Cup (Boiled)
  • How many kulcha lovers are here, who not just want to enjoy their favourite kulcha but also not feel guilty after eating it? This homemade Amritsari Kulcha aka the healthy version of Aloo kulcha- Whole Wheat Kulcha recipe is for all of you! Made without maida or refined flour and minimal ghee, your tummy will be happy-happy after digging in.

    1. Firstly, take wheat flour, salt, 3 teaspoons of ghee, baking powder, and curd. Mix everything gently.
    2. Further, add half a cup of lukewarm water or more as per requirement and knead the dough for a good 10 mins to make it soft and fluffy. Keep it aside.
    3. Simultaneously, boil potatoes in a pressure cooker. Peel and mash them. Then add chopped green chillies, garam masala powder, amchoor powder, red chilli powder, and kasuri methi. Mix them well with the mashed potatoes.
    4. After 2 hours, make medium-sized balls out of the dough and make a round roti with a rolling pin.
    5. Put the potato stuffing in the middle of the rolled chapati. Bring the edges of chapati together and pinch them, sticking them in the middle.
    6. Dust some wheat flour on it and turn the potato-filled ball to the other side.
    7. Now, sprinkle some sesame seeds on it.
    8. Then gently roll the chapati in the shape of a kulcha.
    9. Place a tawa on the stove and use a medium flame to cook the kulcha.
    10. Cook until the kulcha turns golden-brown. Put some ghee and flip to cook the other side too.

    Ta-da! Your drool-worthy whole wheat kulcha is ready! Serve it hot with a bowl of curd and chhole.

    What is Kulcha (Amritsari Kulcha)

    Aaloo Kulcha is a type of stuffed flatbread that everyone- from the young to the old relish all across India, especially the people of Punjab. Stuffed Amritsari kulcha is a variant of naan, which came to India through Persia. The story goes that the royal chef in the court of Mughal King Shahjahan offered him stuffed kulcha once and from then, it went on to become famous in all of the north, especially Punjab. An important point to note is that Amritsari kulcha is different from the rest of the kulchas that India has to offer. It is more like naan, crispy and flaky and is traditionally made inside a tandoor. Amritsari kulcha is almost always served with chhole.

    • Potatoes used as filling in aloo kulcha are a great source of potassium. Potassium is one such mineral that has a multitude of benefits- from helping get rid of water retention from the body to improving the flow of blood in capillaries and preventing heart problems.
    • Whole wheat is a great source of fiber and unlike maida ( which we haven’t used in this recipe, it is not stripped of essential micronutrients). Thus whole wheat kulcha will keep you full for a long time.
    • Sesame seeds that are sprinkled on the aloo kulcha are rich in iron, hence good for anemia patients.
    • Desi ghee used in kulcha’s preparation is a rich source of good fats and Vitamins like A, E, and K which build immunity.
    • Ghee contains a chemical compound called Butyric Acid, which works as an antioxidant and fights off cancer cells in the body.
