Avocado Bruschetta with a sunny-side-up recipe

Ingredients
  • For topping: - 1/2 avocado (unpeeled), thickly grated - 1 tbsp parsley, chopped - ½ tbsp lime juice - ¼ tbsp olive oil - ¼ tsp garlic, crushed - ½ tsp green chili paste - salt and freshly ground black pepper powder to taste
  • FOR SUNNYSIDE UP 1 EGG salt+pepper Preparation:- Melt the 1/2tsp butter in a medium frying pan over high heat. Crack the egg into the pan and let it cook until the egg whites begin coagulating, about 1 minute. Sprinkle it with salt and pepper. Cover with a lid on for 1 minute to finish cooking the egg. Then, uncover and remove the egg from the pan.
  • For serving: - 1 slice of whole-wheat bread

    1) Grate the avocado.
    2) Then, combine all the ingredients of topping, and blend in a mixer to get a smooth paste.
    3) Now, transfer the paste to a bowl.
    4) Just before serving, toast the bread slices in a sandwich griller till they are brown and crispy from both sides. Then, Cut it in half.
    5) Also, apply a portion of the spread evenly over each bread slice.
    6) And now, place the sunny side up eggs above it, garnish it with microgreens and serve hot.
