  • 1/2 teaspoon ginger powder or fresh ginger paste
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon dried red chili flakes
  • 1/2 tsp desi ghee

    • Cut the Baingan crosswise into 1-inch slices. Sprinkle each slice with a little salt and set aside for 15 minutes.
    • Meanwhile, mix together the spices.
    • Pour the desi ghee into a large skillet over medium heat.
