This refreshing Beetroot and Moong Dal Salad Recipe are filled with beets, coconut, lemon juice, and moong dal. Also, it is nowhere near your Basic, Boring, and Bland Green Salad.

Beetroot Salad
  • Wash moong dal thoroughly three to four times and soak it for at least one hour in lukewarm water. And then soak it well.
  • Rinse the beetroot under running water and pat dry it with kitchen tissue.
  • Peel it and cut it into quarters.
  • Grate it well with medium-large holes.
  • Add it to a mixing bowl along with lentils and make sure no excess moisture is left in the lentils.
  • Add salt, grated coconut, lemon juice, and coriander leaves. Toss it well and serve right away without resting.
