Ingredients
  • Carrots - 3/4
  • Water - 1/2 Cup 
  • Thin Coconut Milk -1 Cup
  • Rock Salt - 1 Pinch
  • Ghee - 1 to 2 tbsp
  • Raisins - 4 to 5
  • Cashews - 4 to 5
  • Cardamom Powder - 1/2 tsp
  • Kheer is the secret behind the happiness of every Punjabi. It’s a perfect blend of sweetness, required hardness and the right thickness. But have to avoid this for weight loss.     1. Firstly, boil the carrots till they become soft and completely cooked.
    2. Secondly, take a blender and add 1/4 cup of water and blend the carrots when cooled.
    3. Now mix the carrot puree, coconut milk and salt. Keep on low flame.
    4. Make sure to stir occasionally and don’t bring the mixture to boil.
    5. You will see steam vapours floating on top above the payasam. Take it off the flame and stir in the thick coconut milk.
    6. Then take another pan, and heat ghee. In it add cashews and when they start to change colour, add the raisins and cardamom powder.
    7. Keep frying the cashew turn light golden and the raisins swell and become golden.

    9. To make it more rich and healthy, garnish them with 5-6 pumpkin seeds.
