Method

  1. Firstly, you will have to soak the chickpeas in water overnight. Now take a pressure cooker and add them into it along with some water, salt, a pinch of baking soda and turmeric.
  2. Bring to 2 whistles and then let it boil on low flame for about 15 minutes.
  3. Once boiled, mash the white peas with a spatula and transfer to a bowl. Do not separate the water from white peas before mashing. Transfer the white peas in a large bowl and add in chopped tomatoes and onions along with chaat masala, salt, red chili powder and lemon juice.
  4. Toast kulchas on a hot tawa and your chole kulche are ready to serve!
