Cold Pasta Salad recipe

  • Water - 200 ml
  • Cucumber - 1/4 cup finely Diced
  • Tomatoes - 1/2 cup finely Diced
  • Onion - 1/2 cup finely Diced
  • Olive Oil - 1/2 tbsp
  • Salt - as per taste
  • Bell peppers (yellow & red) - 1/2 cup
  • Paneer cubes - 1 cup
  • Mushrooms - 1 tbsp
  • Whole Wheat Pasta - 1 cup (100g)
  • Oregano - 1/2 tsp
  • Black pepper powder - 1/2 tsp
  • Virgin Olive Oil for the salad dressing
  • Pink Salt - pinch
  • Apple Cider Vinegar - 1 tbsp
  • Lemon juice - 1 tbsp
  • Cold Pasta Salad is super easy to make and the ingredients are simple and flexible, so you can make this anytime you crave a tasty Italian dish. It is ideal for a quick lunch to consume during the week or for last-minute get-togethers. There are no hard-and-fast rules when it comes to choosing the best pasta or mix-ins, but it is preferable to choose the healthier options.

    How to Make Cold Pasta Salad

    For Salad dressing:

    • In a bowl, add olive oil, apple cider vinegar, and lemon juice.
    • Beat it for a couple of minutes till it gets a creamy texture.
    • Then, add black pepper powder, oregano, salt, and mix till well combined.
    • The salad dressing is ready.

    Further Preparation:

    • In a large bowl, add the boiled pasta, tomatoes, cucumber, bell peppers, onions, mushrooms, and paneer cubes, and mix well.
    • Then, pour the salad dressing on top and sprinkle little salt or seasoning.
    • Gently mix it till everything is well combined.
    • Keep the pasta salad in the refrigerator for a couple of hours before serving.

    • Whole-grain pasta contains a good amount of fiber, manganese, and selenium.
    • Wheat pasta made from whole grains is lower in calories and carbs and higher in fiber and micronutrients.

    • Cucumbers are low in calories but high in water and several vitamins and minerals.
    • They contain antioxidants, which thus prevent the accumulation of harmful free radicals and may also reduce the risk of chronic disease.
    • Mushrooms have cancer-fighting Properties. They also help in lowering cholesterol levels.
