  • 1 teaspoon Ground Coriander Seeds

  • 1/2 cup Coconut Milk (optional, for creaminess)

    • Now you can add the spices turmeric, ground coriander, and red chili powder. Mix it well and cook for a minute or two to toast the spices.
    • The next step is to add the chopped tomatoes and cook them until they are soft and mushy.
    • Once your tomatoes are well cooked, then, add the cubed eggplants to the mixture. Stir them well to coat them in the mixture, and cook for a few minutes.
    • Then lower the heat, cover the pan, and let the eggplant cook until they become tender. Meanwhile, stir occasionally to prevent sticking. You can add water if it is sticking.

Then add minced garlic and grated ginger and cook it well. Now add the chopped tomatoes and your spices (turmeric, coriander, and red chili). Once they are all cooked, let them cool down, and then blend the mixture into a puree.
    • Both our masala and the eggplants are ready! Now it’s time to give them a tasty kick!
