Pad Thai Noodles
Ingredients
  • Rice Noodles (Flat)- 350 grams
  • Tofu- 1 Cup
  • Garlic Cloves (grated)-2-3 grated
  • Onion (thinly sliced)- 1 Medium Size
  • Bok Choy (roughly chopped) – 4 Medium Size
  • Carrot (sliced into wedges) - 1
  • Green Bell Pepper (Capsicum) – 1 Medium Size
  • Broccoli – 1 Medium Size
  • Bean Sprouts – 1 Cup
  • Spring Onion (sliced)- 1 Medium Size
  • Coriander (Dhania) Leaves
  • Roasted Peanuts (Moongphali)- 1/2Cup
  • Fresh Green Chilies- 1-2
  • Oil/ Desi Ghee- 1-2 Tbsp
  • Lemon Wedges – 1
  • Tamarind Water- 1/2 Cup
  • Soy Sauce- 1/4 Cup
  • Date Syrup- ¼ Cup
  • Pad Thai noodles are a popular dish that has a delicate balance of spicy, sweet, salty, and sour flavors. These Pad Thai noodles are cooked on the bases of the traditional Bangkok-style version. These noodles are not swimming in sauce like many Western versions found in restaurants. The recipe is full of flavor with a light coating of delicious sauce in every bite. Mainly this recipe is cooked with meat and chicken but here we are preparing it full of veggies, tangy sauces, etc. So, let’s learn how to prepare this traditional Thai recipe at home.

    How To Prepare Pad Thai Noodles

    Step 1: Boil the Noodles

    1. To begin with, bring a pot of water to a boil and remove it from the heat. Soak rice noodles in the hot water for at least 15 minutes.
    2. Then, drain and rinse with cold water.

    Step 2: Prepare Pad Thai Sauce

    1. Into a bowl, add ½ cup of tamarind water, ¼ cup of soy sauce, and ¼ cup of date syrup, and stir well.
    2. Add as much or as little green chili sauce as you prefer (if you want it spicy). Set this sauce mixture aside.

    Step 3: Putting the Pad Thai Together

    1. Place wok over low flame. Then, add a tablespoon of oil/desi ghee. After heating the oil/ghee add the garlic and onions. Stir fry for about a minute to release the fragrance.
    2. Add carrots, broccoli, and bell peppers and stir-fry for 1-2 minutes until the vegetables are slightly softened and yet crisp. Also, stir in the tofu for a few seconds.
    3. Now add the drained noodles and 1/3 of the prepared Pad Thai sauce. Stir-fry everything together for 1 minute.
    4. Furthermore, you can add a little more sauce and continue stir-frying in the same way for 1-2 more minutes, or until the noodles begin to soften.
    5. Add the bean sprouts plus the remaining sauce. Stir-fry to incorporate everything together into the vegetarian Pad Thai for 1-3 more minutes.
    6. Now, remove from heat and start a taste test. You can even add more Pad Thai sauce/ soy sauce/ chili sauce if desired for more salt or flavor.
    7. Finally, to serve, scoop noodles onto a serving platter. Sprinkle with green onion, fresh coriander, and peanuts.
