Quinoa veg soup is super easy to make, packed with flavor, and will keep you full for hours. It is made with protein-packed quinoa and veggies.
How To Make Quinoa Veg Soup
- Heat olive oil in a stockpot on medium flame and add chopped onion, garlic, and a pinch of salt.
- Keep stirring often until the onion has softened and is turning brownish.
- Next add all chopped vegetables while stirring frequently till it releases an aromatic fragrance.
- Dice tomatoes roughly and add to the pot, keep stirring it until their juice is released. Rinse quinoa on the other hand for later use.
- Increase the flame and bring the mixture to a boil, pour quinoa, water, and bay leaves and partially cover the pan reducing the heat to maintain a gentle simmer.
- Cook the mixture for at least 20 mins so that all ingredients combine well and form a thick texture.
- After that add boiled chickpeas and continue stirring for 5 more minutes.
- Lastly, add lemon juice and sieve the soup after removing the pan from the flame.
- Pour hot quinoa veg soup into a soup bowl and garnish it with coriander leaves.
- Quinoa contains all the essential amino acids that you need, making it an excellent protein source for vegetarians and vegans.
