Ingredients
  • Chopped onion - 1 medium size
  • Bayleaf - 1 to 2
  • Boiled chickpeas - 1 cup
  • Lemon juice - 2 tsp
  • Olive Oil - 1 tbsp
  • Coriander leaves - 2 for garnish
  • Chopped Carrots - 2 small size
  • Diced Bell pepper- 1/2 cup
  • Garlic cloves - 2 to 3
  • Black pepper powder - 1 tsp
  • Tomato - 2 large size
  • Water - 2 cups
  • Quinoa - 1 cup
  • Zucchini Dices - 1 cup
  • Diced Pumpkin - 1 cup
  • Quinoa veg soup is super easy to make, packed with flavor, and will keep you full for hours. It is made with protein-packed quinoa and veggies.

    How To Make Quinoa Veg Soup

    • Heat olive oil in a stockpot on medium flame and add chopped onion, garlic, and a pinch of salt.
    • Keep stirring often until the onion has softened and is turning brownish.
    • Next add all chopped vegetables while stirring frequently till it releases an aromatic fragrance.
    • Dice tomatoes roughly and add to the pot, keep stirring it until their juice is released. Rinse quinoa on the other hand for later use.
    • Increase the flame and bring the mixture to a boil, pour quinoa, water, and bay leaves and partially cover the pan reducing the heat to maintain a gentle simmer.
    • Cook the mixture for at least 20 mins so that all ingredients combine well and form a thick texture.
    • After that add boiled chickpeas and continue stirring for 5 more minutes.
    • Lastly, add lemon juice and sieve the soup after removing the pan from the flame.
    • Pour hot quinoa veg soup into a soup bowl and garnish it with coriander leaves.
