What do you do when you have unexpected guests coming to your home and you are left with eggs in your fridge? The answer is to make this simple and delicious egg curry recipe with a nice tangy taste of tomatoes and a couple of spices.

  1. Take a non stick pan. Into it, add cumin seeds and mustard seeds. Add chopped onions and cook till they start turning light brown in color.
  2. Add garlic, ginger and green chili to the pan. Cook them for a while.
  3. Add pureed tomatoes and cover the pan. Further, cook for 5 minutes on medium heat.
  4. Then, add salt, coriander powder, turmeric powder, garam masala powder and red chili powder. Cover the pan again and cook for another 6-7 minutes.
  5. Once the tomatoes and spices are nicely cooked, add 1 cup of water to the pan.
  6. Finally. add the boiled eggs into the curry and cover the pan. Simmer for another 2 minutes.
  7. Finally, your egg curry is prepared!
