Ingredients
  • Olive Oil - 2 Tbsp
  • Chopped Onions - 1 Medium Sized
  • Chopped Garlic - 2 Small
  • Chopped Carrots - 1 Medium Sized
  • Chopped Celery - 1 Tbsp
  • Mushrooms - 250 Grams
  • Chopped Tomatoes - 5
  • Chopped Basil - ¼ Cup
  • Dried Oregano - ¼ Tsp
  • Tomato Paste - 2 Tbsp
  • Red Chili Flakes - 1 Tsp
  • Vegetable Stock - ½ Cup
  • White Or Black Pepper - ¼ Tsp
  • Salt - As Per Taste
  • Water - 5 Cups
  • Spaghetti - 250 Grams
  • A simple to make Spaghetti Bolognese is a hearty and family-friendly dish made from healthy Kuttu Atta.     • Sauté the mushrooms with the vegetables until all of the water in the pan has evaporated. When sautéing mushrooms, they will release a lot of water. So cook until all of the water has evaporated.
    • Stir in 3 to 14 cups of finely chopped tomatoes.
    • Mix and cook for 3 to 4 minutes.
    • Add the herbs and seasonings to the pan which are, 2 tablespoons tomato paste, 14 cups chopped fresh basil, 12 teaspoons dried oregano, salt to taste, 1 teaspoon red chili flakes (optional), and 14 teaspoons black or white pepper.
    • Pour in 12 cups of water or vegetable stock.
    • Mix thoroughly.
    • Cover and cook for 30 minutes on medium-low heat.
    • Check the pot or pan every few minutes, stir, and add 14 cups at a time if the sauce is cooking too quickly and sticking to the pan.
    • Once the bolognese sauce has thickened, remove it from the heat and set it aside.

    How To Make Spaghetti Bolognese

    • In a medium to large pot or pan, bring 5 cups of water and 1 teaspoon salt to a boil. Put the spaghetti made from kuttu atta in a pot of boiling water.
    • Cook the spaghetti on medium to medium-high heat until al dente.
    • Set aside 12 cups of pasta water. The cooked spaghetti should then be strained in a colander. There is no need to rinse.
    • To the mushroom bolognese sauce, add the drained spaghetti.
    • Toss the spaghetti with tongs or a pasta scoop to coat thoroughly. If the sauce appears too thick, add some of the reserved pasta water and gently mix.

    • Tomatoes: For the bolognese sauce, I recommend using ripe, red, sweet, and not overly sour or tangy tomatoes. In place of fresh tomatoes, you can use canned tomatoes or Italian whole tomatoes with juice. Before adding the tomatoes, simply crush them.
    • Tomato paste: Though tomato paste adds depth to the sauce, you can omit it if you don’t have any on hand.
    • Mushrooms: While I prefer button mushrooms, cremini or shiitake mushrooms can also be used.
    • Fresh herbs should be used instead of dried herbs. 1 to 2 teaspoons of dried basil can be used in place of fresh basil.
    • Add-ins: To add richness to the dish, add some cream to the sauce. If you prefer, you can grate some vegetarian parmesan cheese. before serving.
    • Spiciness: If you are sensitive to pungency or heat, reduce or skip the red chili flakes from the spaghetti bolognese recipe.
