- Pour in 12 cups of water or vegetable stock.
- Mix thoroughly.
- Cover and cook for 30 minutes on medium-low heat.
- Check the pot or pan every few minutes, stir, and add 14 cups at a time if the sauce is cooking too quickly and sticking to the pan.
- Once the bolognese sauce has thickened, remove it from the heat and set it aside.
How To Make Spaghetti Bolognese
- In a medium to large pot or pan, bring 5 cups of water and 1 teaspoon salt to a boil. Put the spaghetti made from kuttu atta in a pot of boiling water.
- Cook the spaghetti on medium to medium-high heat until al dente.
- Set aside 12 cups of pasta water. The cooked spaghetti should then be strained in a colander. There is no need to rinse.
- To the mushroom bolognese sauce, add the drained spaghetti.
- Toss the spaghetti with tongs or a pasta scoop to coat thoroughly. If the sauce appears too thick, add some of the reserved pasta water and gently mix.
