  • Milk-1 Liter
  • Date Syrup- 3-4 tablespoon
  • Saffron – ½ teaspoon
  • Rose Essence- 2-3 Drops
  • Clove- 1-2
  • Almonds – 3-7
  • Cashews – 10-11
  • Poppy Seeds – 1 Teaspoon (optional)
  • Fennel Seeds- 1 Teaspoon
  • Cardamom Powder- 4
  • Peppercorns – ¼ Teaspoon
  • Melon Seeds- 2 Teaspoon
  • Pistachios – 2 Teaspoon
  • Thandai recipe is a traditional Indian refreshing drink popular mainly in North Indian states such as UP, Punjab, and Rajasthan. It is prepared especially during the festival of Holla Mahalla (sikh festival) and Holi. Thandai is a flavored, spicy, and sweet drink. It is quite refreshing and loaded with rich ingredients such as dried fruits, seeds, saffron, etc. So, let’s learn how to make this traditional recipe.

    The word thandai comes from the Hindi word ‘thand,’ which means cool. This drink has a cooling effect on the human body, as its name says. Since thandai recipe is a refreshing drink for the human body, it is also referred to as ‘shardai’ or ‘sardai’. This drink is prepared with the help of milk and traditionally with a dose of bhang (cannabis). There are many readymade versions of this drink available in the market, but nothing beats the taste of homemade thandai.

    How To Prepare Thandai Recipe

    • Firstly, place all the ingredients (Poppy Seeds (optional), Clove, Almonds, Cashews, Poppyseeds, Fennel Seeds, Cardamom, Peppercorns, Melon Seeds, and Pistachios) listed in a bowl.
    • Secondly, add water to it. Set it aside for 1 hour and keep it covered.
    • Thirdly, transfer to a mixer jar. Grind it to a fine paste. Set aside.
    • Now, boil the milk and simmer for 2 minutes.
    • Then, add saffron to it and let it simmer until the color changes. It takes at least 7–10 minutes.
    • Later on, add date syrup to it. Give it a quick mix.
    • Again, simmer for 3-5 minutes, then switch off. Keep it aside for it to cool down.
    • When it is lukewarm, add the prepared paste (in 3 steps).
    • Mix it well so that no lumps are formed.
    • Now, set aside for at least an hour for all the flavors to soak in the saffron milk.
    • After some time approx an hour or so, drain using a metal strainer.
    • Mix it well with a ladle.
    • Repeat to finish. Discard the remains.
    • Then, add a few drops of rose essence to it and mix it well. Thandai is ready. Chill this and serve along with chopped nuts and saffron.
    • Enjoy the chilled thandai recipe.
