  • 2-3 tsp minced ginger
  • 1 cup vegetable stock
  • Lime

    Sweet potato soup
    1. Firstly, peel the sweet potato and chop it roughly. Simultaneously, mince some ginger.
    2. In a saucepan, place the chopped sweet potato and minced ginger.
    3. Further, pour in the vegetable stock and water and bring it to a boil.
    4. Simmer the flame and cook it until the sweet potatoes soften.
    5. Now, puree the potatoes in a food processor or use a hand blender for the same.
    6. At the end, return the soup to the saucepan and heat until it thickens a little bit.
    7. Serve the soup hot and ENJOY!
