  • To begin zucchini soup recipe, wash all the vegetables (Onion, Carrot, Spinach, Broccoli, zucchini), Peel off and chop them roughly and add them into a Pressure Cooker to make Vegetable Stock (liquid made from boiling vegetables). 
  • Then, heat a pan and add 2-3 tablespoons of Olive Oil or Butter.
  • Add Chopped Garlic, Ginger, Onion to it.
  • Sauté till these get to turn translucent or brown.
  • Then, add Green Chili to it. 
  • After that, add Zucchini to it and sprinkle a little salt (according to your diet plan). 
  • Now, add Vegetable Stock and cover it and simmer for 10-15 minutes.
  • Blend the mixture until it gets desired consistency. 
  • Further, sprinkle pepper on it and transfer the soup in a bowl.
  • Squeeze half lemon in soup and garnish it with Mint leaves.
  • Aah! You made it. The Simple, Delicious and Healthy soup is now ready to have.
