Ingredients
  • Mixed Vegetables - 1 Cup
  • Zucchini (Skin on) - 2-3
  • Onion - 1 Finely Chopped
  • Garlic - 3 Cloves
  • Lemon - 1
  • Ginger - Small piece
  • Vegetable Stock or Broth - 1/3 Cup
  • Olive Oil - 2 tbsp
  • Salt - 1 Pinch
  • Green Chilli - 1-2
  • Mint Leaves - 5-6
  • Black Pepper - 1 Pinch

    • To begin the zucchini soup recipe, wash all the vegetables (Onion, Carrot, Spinach, Broccoli, zucchini), Peel them off and chop them roughly and add them into a Pressure Cooker to make Vegetable Stock (liquid made from boiling vegetables). 
    • Then, heat a pan and add 2-3 tablespoons of Olive Oil or Butter.
    • Add chopped garlic, ginger, and onion to it.
    • Sauté till these get to turn translucent or brown.
    • Then, add green chili to it. 
    • After that, add zucchini to it and sprinkle a little salt (according to your diet plan). 
    • Now, add vegetable stock and cover it and simmer for 10-15 minutes.
    • Blend the mixture until it gets desired consistency. 
    • Further, sprinkle pepper on it and transfer the soup into a bowl.
    • Squeeze half a lemon in soup and garnish it with Mint leaves.
    • Aah! You made it. The simple, delicious, and healthy soup is now ready to have.
