Think broccoli is boring? Give it a tandoori makeover. This air fryer tandoori broccoli turns everyday broccoli into a smoky, spicy and slightly charred snack with a creamy masala coating.

The florets are marinated in thick curd, ginger-garlic, lemon juice and aromatic Indian spices before being air-fried until the edges turn beautifully crisp.

It is quick to prepare, needs very little oil and works well as a starter, evening snack or side dish. You can also adjust the spice level to suit your taste.

How To Make Air Fryer Tandoori Broccoli

Step 1: Prepare the Broccoli

Wash the broccoli thoroughly and cut it into medium-sized florets.

Bring about 1 litre of water to a boil and add a small pinch of salt.

Add the broccoli and blanch it for 2 minutes.

Immediately drain and place the florets under cold running water or transfer them to a bowl of cold water.

This stops the cooking process and helps retain some of the broccoli’s texture.

Pat the florets completely dry with a clean kitchen towel.

Do not skip drying: Excess water can prevent the marinade from coating the broccoli properly and can affect browning in the air fryer.

Step 2: Prepare the Marinade

In a large bowl, add:

  • Thick curd
  • Ginger-garlic paste
  • Kashmiri chilli powder
  • Turmeric
  • Cumin powder
  • Coriander powder
  • Garam masala
  • Chaat masala
  • Lemon juice
  • Besan
  • Oil
  • Salt

Mix everything until you get a thick, smooth marinade.

If your curd is watery, strain it through a muslin cloth for 15–20 minutes before using it.

Step 3: Coat the Broccoli

Add the completely dried broccoli florets to the marinade.

Gently toss until every floret is evenly coated.

Avoid crushing the broccoli while mixing.

For better flavour, cover the bowl and refrigerate for 20–30 minutes.

If you have more time, you can marinate it for up to 2 hours.

Step 4: Preheat the Air Fryer

Preheat your air fryer to 190°C for 3–5 minutes.

Preheating helps the marinade start cooking immediately and encourages better browning.

Step 5: Arrange the Broccoli

Lightly grease the air fryer basket with a little oil.

Place the marinated broccoli in a single layer.

Avoid overcrowding the basket.

If the florets are packed too closely, steam can build up and the broccoli may become soft instead of developing crisp, charred edges.

Step 6: Air Fry

Air fry the broccoli at 190°C for 10–12 minutes.

After about 6 minutes, open the basket and turn or shake the florets.

Continue cooking until the broccoli develops lightly charred edges and the marinade is cooked through.

For extra browning, increase the temperature to 200°C for the final 1–2 minutes, keeping a close eye on it.

Cooking time can vary depending on the size of the florets and your air fryer model.

Step 7: Garnish

Transfer the tandoori broccoli to a serving plate.

Sprinkle it with a little chaat masala and fresh coriander.

Serve immediately with lemon wedges.

You can also serve it with mint-coriander chutney, onion rings or a bowl of thick curd.

Frequently Asked Questions

Can I Make Tandoori Broccoli Without An Air Fryer?

Yes. Arrange the marinated broccoli on a lined baking tray and bake at around 220°C for 15–20 minutes, turning halfway through. Cooking time may vary depending on your oven.

Do I Have To Blanch The Broccoli?

Blanching is recommended because it slightly softens the broccoli and helps it cook more evenly. However, you can skip it if you prefer a firmer texture.

Why Is My Tandoori Broccoli Not Crispy?

Excess moisture, watery curd, overcrowding and insufficient preheating can all reduce browning. Make sure the broccoli is dry, use thick curd and arrange the florets in a single layer.

Can I Marinate The Broccoli Overnight?

It is better to marinate it for around 20 minutes to 2 hours. A very long marinade can make the vegetables release moisture and soften the coating.

Can I Make This Recipe Without Besan?

Yes. Besan helps the marinade adhere to the broccoli and encourages browning, but you can use a small amount of corn flour or rice flour as an alternative.

Is Frozen Broccoli Suitable For This Recipe?

Yes, but thaw it completely and remove as much excess moisture as possible before marinating. Fresh broccoli generally gives a firmer texture.
