Preparation of Chole

So, to prepare the delicious Chole, follow these steps:

  • Firstly, begin by placing the chana in a pressure cooker. Then, add loose tea, salt, and cloves with water to enhance flavor. Allow it to boil until you hear five whistles from the pressure cooker.
  • Once the chana is cooked, remove it from the heat and let the pressure release naturally.
  • Next, transfer half a cup of boiled channa and tomato into a blender and blend until smooth.
  • Then, heat ghee for the tadka in a kadhai, add green chilies, and pour in the blended batter.
  • Further, add salt, turmeric, kitchen king masala, red paprika, and channa masala to it and saute them well to release the aroma.
  • Then, add the boiled channa to the tadka with water as required. Also, let it cook on a medium flame for 10 minutes.
  • Lastly, to elevate the taste, garnish the Chole with finely sliced ginger and squeeze fresh lemon juice over it.

Preparation of Kulcha

So, to prepare the Kulcha, follow these steps:

  • Firstly, in a mixing bowl, combine wheat flour, baking soda, baking powder, curd, salt, and water as required. Further, knead the ingredients together to form a soft dough.
  • Then, allow the dough to rest for 3 hours, covering it with a damp cloth or plastic wrap.
  • Further, after the resting period, divide the dough into small, equal-sized balls.
  • Then, roll a dough ball into a round-shaped kulcha, ensuring it’s not too thick or too thin.
  • Also, brush one side of the Kulcha lightly with water and sprinkle sesame seeds and chopped coriander leaves. Then, roll it again a little.
  • Heat a pre-heated tawa or a griddle pan and brush the sides with water instead of ghee.
  • Then, place the Kulcha on the hot pan, sesame sides up, and cover it with a lid to create steam because it helps the Kulcha cook evenly.
  • After a few minutes, the Kulcha will puff up, then apply a little desi ghee and flip it. Cook the other side until it turns golden brown and gets a nice char.
