Ingredients
  • 1 tablespoons unsalted butter
  • Mushrooms, thinly sliced
  • 2 cloves garlic
  • 1 teaspoons fresh thyme leaves
  • 1 tsp black pepper
  • 2 cups spinach
  • 2 large eggs

    1. Melt butter in a large skillet over medium heat.
    2. Then, add mushrooms, garlic, thyme.
    3. Cook, stirring occasionally, until tender for about 3-4 minutes.
    4. Then, season it with salt and pepper, to taste.
    5. Stir in spinach and then cook about 2 minutes.
    6. Then, top with eggs and season it with salt and pepper.
    7. Now, place it into the oven and bake it till the egg whites are set i.e. about 10-14 minutes.
    8. Then, get them out of oven in a plate.
    9. You can also sprinkle it with black pepper and do not forget to enjoy it hot!
