  • Yellow split moong dal (or your favorite lentils)- 1 cup
  • Diced carrots- 2
  • Diced zucchinis (or bell pepper, any veggie of your choice)- 2
  • Chopped tomatoes- 2
  • Finely chopped onion- 1 medium
  • Minced Garlic - 4-5 cloves
  • Grated ginger - 1½ inch
  • Cumin seeds- 2 teaspoons
  • Turmeric powder- 1 teaspoon
  • Garam masala- 1 teaspoon
  • Red chili powder (optional)- A pinch
  • Salt to taste
  • Oil or ghee- 2 tablespoons
  • Water or vegetable broth- 8 cups
  • Chopped coriander leaves
  • Lemon juice- 1-2 tablespoon
