  • 2-3 large zucchini
  • 2 eggs (optional)
  • ? tsp garlic powder
  • Salt (as directed by your dietitian)
  • This Keto Baked Zucchini Recipe is made from just three ingredients and just some spices. Baked zucchini is a great snack and this version is gluten-free, low-carb, and eco-friendly.

    How To Prepare Keto Baked Zucchini Recipe

    1. Preheat the oven to 425 degrees F. Then, line the baking tray with aluminum foil or parchment paper. Set aside.
    2. Then combine 2 eggs in a small bowl and set aside.
    3. Now dip the zucchini strips in egg mixture and transfer to a pre-greased baking sheet. Repeat until all the zucchini strips are coated with egg.
    4. Further, season with salt, pepper, and garlic powder.
    5. Bake in the preheated oven, turning once, until golden brown and crisp, i.e. for 30-35 minutes.
    6. ENJOY HOT!
