  • 1 small eggplant (begun), cut into thin slices
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 2-3 green chilies, slit (adjust to your spice preference)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • Salt to taste
  • 2 tablespoons mustard oil (for an authentic taste) or a healthier cooking oil
  • Fresh coriander leaves for garnish (optional)

    How To Make Begun Diye Ilish Macher Jhol?

    • Start by cleaning the Hilsa fish. Remove any scales and wash them well. You can cut the fish into smaller pieces if desired.
    • Rub the fish pieces with a pinch of turmeric and salt. Let them sit for about 15 minutes.

    • Reduce the heat to low and add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well and cook for a few minutes, stirring constantly.
    • Add the fried eggplant back to the pan and mix with the spices.
    • Return the seared Hilsa fish pieces to the pan and gently mix them with the eggplant curry and spices.
    • Add enough water to achieve the desired consistency for the curry. Cover the pan and simmer for about 10-15 minutes until the fish is cooked through.
    • Garnish with fresh coriander leaves if desired.
