Ingredients
  • Basmati Rice - 1/4 Cup
  • Low-Fat Milk - 2 cups
  • Jaggery or Sugar Substitute (adjust to your sweetness preference) - 2-3 tablespoons
  • Green Cardamom Pods, Crushed or Powdered - 2-3
  • Saffron Strands (optional) - A Small Pinch
  • Slivers of Almonds or Pistachios For Garnish (optional) - A few
  • Chaaler Payesh is a timeless Bengali dessert that seamlessly accompanies every festive occasion, offering warmth, comfort, and an irresistible flavor. This dessert is a must-have during Durga Puja, with its rich tradition and history. Payesh, an age-old sweet treat, is crafted from milk, rice, sugar, and raisins, and infused with the fragrant essence of bay leaf and cardamom. Despite its simplicity and minimal ingredients, this recipe yields an extraordinary and delightful result. You can prepare a Chaaler recipe with less sugar and low-fat milk which makes it best addon to your weight loss diet.

    Instructions:

    1. Rinse the rice thoroughly and soak it in water for about 15 minutes.

    2. In a large, heavy-bottomed pan, bring 2 cups of low-fat milk to a boil.

    3. Drain the soaked rice and add it to the boiling milk. Reduce the heat to low and let the rice simmer in the milk. Stir occasionally to prevent sticking to the bottom.

    4. Once the rice is cooked and the milk has thickened (this may take 20-30 minutes), add the jaggery or sugar substitute and the crushed cardamom. Adjust the sweetness to your preference.

    5. If using saffron, you can soak a small pinch of saffron strands in a tablespoon of warm milk for a few minutes and then add it to the pudding for a delicate saffron flavor. This will include saffron benefits in your payesh

    6. Continue to simmer for a few more minutes until the jaggery or sugar substitute is well incorporated.

    7. Once the Chaaler Payesh has reached the desired consistency and sweetness, remove it from the heat.

    8. Garnish with slivers of almonds or pistachios if desired.
