Ingredients

1 cupMakhana
4 CupsWhole milk
½ tspStevia
½ tspCardamom powder
A pinch ofSaffron strands
Chopped NutsAlmonds, cashews, pistachios for garnish

Instructions

  • To begin with, first, roast the makhana with ghee until they are crisp and golden. Once they are done, set aside.
  • Then, in a separate saucepan bring the milk to boil and then lower the flame and let it simmer.
  • Meanwhile, crush the roasted makhana into smaller pieces with your hands or a rolling pin. You can keep some of them whole for texture if you prefer.
  • Now add the crushed makhana to the milk and continue to cook on low heat. Stir frequently to ensure the makhana is well incorporated into the milk.
  • Then add saffron strands and cardamom powder and continue to cook until the milk reduces and thickens to your desired consistency.
  • Now add stevia and stir it well. Once it mixed well, remove the kheer from the flame and let it cool to room temperature. Before serving garnish it with chopped nuts.
  • Lastly, serve chilled and enjoy the kheer!

Ingredients

For the Rasgullas:

1 literSkimmed milk
1 tablespoonLemon juice or vinegar
½ teaspoonCardamom powder

For the syrup:

1 teaspoon / 1.5 – 2 tablespoonsStevia liquid/ Stevia powder
3 cupsWater 

Instructions

Making Chhena (Paneer)

  • Firstly, boil the milk over medium heat. Once it comes to a boil, reduce the flame and add lemon juice or vinegar. Then stir gently until the milk curdles and the whey separates.
  • Then, turn off the heat and strain the curdled milk through a muslin cloth or fine mesh strainer.
  • Next, rinse the chenna under cold water to reduce the temperature and remove any residual lemon juice.
  • Now squeeze out the excess water from the chenna. Make sure that there is no water in the chenna.

Preparing The Rasgulla Dough

  • To begin with, start by kneading chhena in a bowl until it becomes smooth and soft. This can take around 10-15 minutes.
  • Then add the cardamom powder and sugar substitute to the chhena and knead it again.
  • Now divide the chhena dough into equal portions and shape them into small smooth balls with no cracks on them.

Cooking The Rasgulla

  • Firstly, in a wide pot, combine the sugar substitute and water, then bring it to a boil.
  • Then gently slide the chhena balls into the boiling syrup. Cover the pot and let it cook on medium heat for about 15-20 minutes, and keep checking occasionally to ensure they are cooking evenly.
  • Further, you will see they are double in size and spongy. Then turn off the flame and let it cool in the syrup, or refrigerate them and serve the chilled rasgullas.

1 cup Multigrain flour (combination of wheat flour, jowar flour, and besan)

2-3 green chiliesFine chopped
½ teaspoonCumin seeds
¼ teaspoon Turmeric powder
¼ teaspoonRed chili powder
SaltTo taste
1-2 tablespoon Oil
WaterAs needed

Instructions

  • Firstly, in a mixing bowl, combine the multigrain flour, chopped onion, grated carrots, chopped spinach, green chilies, cumin seeds, turmeric powder, red chili powder, and salt.
  • Then gradually add water to the mixture and knead into a dough making sure the dough is not too dry or too sticky. Further, divide the dough into equal sized portions and shape them into balls.
  • Take a clean, flat surface like a plastic sheet or parchment paper. Place a portion of the dough on it and flatten it gently using your fingers. Thalipeeth is traditionally made by patting the dough with wet fingers to form a round flatbread, about 6-7 inches in diameter. Make sure that it’s not too thick or too thin. 
  • Then make a hole in the center of the Thalipeeth to allow even cooking. Now heat a griddle (tava) over medium heat. Once it’s hot, drizzle a little oil on it, then, carefully place the flattened Thalipeeth on the tava.
  • Cook the Thalipeeth on both until they are golden brown and crisp. Once cooked remove it from the tava and repeat the process for the others.
  • Lastly, serve hot Thalipeeth with yogurt, chutney, or pickle.

Ingredients

1 literLow fat milk or skim milk
1/4 teaspoonStevia
1/4 teaspoonCardamom powder
1 tablespoonChopped nuts (almonds, pistachio, cashews)
1 tablespoonRaisins

Instructions

  • Firstly, boil the milk over medium flame and stir continuously to prevent it from sticking or forming skin. Once the milk comes to a boil, let it simmer over low flame until it reduces to half. This can take 45 minutes to 1 hr.
  • When the milk is half, then, add the sweetener, stir it well, and continue to simmer. Then add cardamom powder and keep simmering until it reaches the desired consistency.
  • Once it reaches the desired consistency, turn off the heat and let it cool. Meanwhile, in a separate pan roast the chopped nuts and raisins with a little bit of ghee, then, add them to your Basundi.
  • Allow it to cool down to room temperature and refrigerate it for a few hours. Lastly, serve chilled Basundi and enjoy!

Kesari is also known as Kesari Baath or Sheera in different regions of India. It is a popular sweet semolina dessert with saffron benefits. It is made of simple ingredients and is often prepared for festivals and special occasions.

Ingredients

Chopped nuts (cashews and almonds)Semolina (sooji or rava)
1/2 cupGhee
1 teaspoonStevia
2 CupsWater
A pinchSaffron strand
1/4 Cup Chopped nuts (cashew and almonds)
1/2 teaspoonCardamom powder
A  fewRaisins
A pinchYellow or orange food color

Instructions

  • Firstly, prepare saffron, soak a pinch of saffron strands in 2 tablespoons of warm milk. Set it aside to infuse.
  • Then, roast the semolina over medium low heat until it turns golden brown and emits a nutty aroma, this will usually take 5-7 minutes.
  • Meanwhile, in a separate pan, heat ghee then add chopped nuts and raisins to the pan and roast them until they turn golden brown. Once they are done set them aside.
  • Now in a pan add water and bring it to a boil, then add stevia and stir it until it completely dissolves.
  • Then, gradually add the roasted semolina to the boiling water while continuously stirring it to prevent lumps. Further, continue to cook and stir until the semolina absorbs the liquid and the mixture thickens. It will start to pull away from the sides of the pan.
  • Now you can add ghee, saffron-infused milk, and cardamom powder to the mixture and mix it well. If you want to enhance the color add food color but it is completely optional.
  • Finally, add the roasted nuts and raisins and mix them well. Then remove it from the heat and let it cool down. Serve Kesari hot or at room temperature and enjoy!

About Dussehra Festival – 2023

Dussehra, also known as Vijayadashami, is a major Hindu festival celebrated in India. It holds great significance as it marks the triumph of good over evil. 

The name “Dussehra” is derived from the Sanskrit words “dasha” (meaning ten) and “hara” (meaning defeat), which symbolizes the day Lord Rama defeated the demon king Ravana after ten days of fierce battle, as described in the Hindu epic Ramayana. Dussehra is also associated with the victory of Goddess Durga over the buffalo demon Mahishasura, which is celebrated in the preceding nine days during Navaratri.

Dussehra is typically celebrated on the tenth day of the lunar calendar month of Ashwin, which usually falls in September or October of the Gregorian calendar. Dussehra 2023 is on Tuesday, October 24th.
