  • There is a reason Marry Me Chicken became such a viral comfort-food recipe. Tender chicken coated in a creamy, garlicky sauce with tangy sun-dried tomatoes is the kind of combination that makes an ordinary dinner feel special.

    But the traditional version can be quite rich.

    So, why not keep everything you love, the creamy sauce, juicy chicken, garlic, herbs and cheesy flavour, while making it a little more balanced?

    How To Make Healthy Marry Me Chicken?

    Step 1: Season the Chicken

    Add the chicken pieces to a bowl.

    Add salt, black pepper, paprika and Italian seasoning. Toss well so that every piece is evenly coated.

    Let the chicken rest for about 10 minutes while you prepare the other ingredients.

    This small step helps the seasoning penetrate the chicken and gives it much more flavour.

    Step 2: Sear the Chicken

    Heat 1 tablespoon olive oil in a large non-stick pan over medium-high heat.

    Place the seasoned chicken pieces in the pan in a single layer.

    Cook for around 3–4 minutes on each side, or until golden on the outside and cooked through.

    Do not overcrowd the pan. If necessary, cook the chicken in two batches.

    Pour in the chicken stock or water and scrape the bottom of the pan gently to release all those flavourful browned bits.

    Add the low-fat milk and cooking cream.

    Don’t boil the sauce aggressively, especially after adding dairy, as this can affect its texture.

    Step 5: Add the Cheese and Herbs

    Add Parmesan cheese, Italian seasoning and a little black pepper.

    Stir until the cheese melts into the sauce and the mixture becomes creamy.

    Taste and adjust the salt if needed.

    Place the cooked chicken back into the pan.

    Cover and simmer on low heat for around 3–4 minutes so the chicken absorbs the flavours.

    If the sauce becomes too thick, add a splash of water or chicken stock to loosen it.

    Turn off the heat.

    Add fresh chopped parsley and, if you like, a small squeeze of lemon juice.
