For the Base
- Medjool dates β 12
- Desiccated coconut β 2 tbsp
- Chia seeds β 1 tsp
- Sesame seeds β 1 tsp
Filling 1: Peanut Butter & Chocolate
- Natural peanut butter β 3 tbsp
- Unsweetened cocoa powder β 1 tsp
- Dark chocolate β 15 g, finely chopped
- Chopped peanuts β 1 tbsp
Filling 2: Almond Coconut
- Almonds β 12, roughly chopped
- Unsweetened desiccated coconut β 2 tbsp
- Peanut or almond butter β 2 tbsp
- Cinnamon powder β ΒΌ tsp
Filling 3: Pistachio & Coconut
- Pistachios β 2 tbsp, chopped
- Desiccated coconut β 1 tbsp
- Tahini or peanut butter β 2 tbsp
- Cardamom powder β ΒΌ tsp
How To Make Healthy Stuffed Dates?
Step 1: Prepare the Dates
Take 12 dates and place them on a clean plate or chopping board.
Using a small knife, carefully make a slit lengthwise along one side of each date. Do not cut the date completely in half.
Remove the seed and gently open the date to create enough space for the filling.
Tip: If your dates feel dry or firm, soak them in warm water for about 5 minutes, then pat them completely dry before stuffing.
Step 2: Prepare the Peanut Butter Chocolate Filling
In a small bowl, mix 3 tbsp natural peanut butter with 1 tsp unsweetened cocoa powder.
Stir until smooth.
Add a little chopped dark chocolate and chopped peanuts for extra texture.
Take about Β½ tsp of the mixture and spoon it into each date.
Step 3: Prepare the Almond Coconut Filling
For the second filling, combine:
- 2 tbsp chopped almonds
- 2 tbsp desiccated coconut
- 2 tbsp nut butter
- ΒΌ tsp cinnamon
Mix everything until it forms a slightly sticky mixture.
Stuff approximately Β½ tsp into each date and gently press the sides together.
Step 4: Prepare the Pistachio Coconut Filling
Mix 2 tbsp chopped pistachios, 1 tbsp coconut, 2 tbsp tahini or peanut butter and ΒΌ tsp cardamom powder.
The combination of pistachio and cardamom gives these dates a naturally dessert-like flavour without needing additional sugar.
Fill the remaining dates with the mixture.
Step 5: Add the Finishing Touch
For a prettier presentation, roll or lightly coat the stuffed dates with a little desiccated coconut, chopped pistachios or sesame seeds.
You can also drizzle a very small amount of melted dark chocolate over them if you’re making these for a special occasion.
Step 6: Chill And Serve
