Step-by-Step Method: Make a Café-Style Healthy Paneer Frankie
Step 1: Marinate the Paneer
In a bowl, combine:
- Red chilli powder
- Turmeric
- Roasted cumin powder
- Coriander powder
- Garam masala
- Ginger-garlic paste
- Salt and pepper
Add paneer and mix gently so every piece is coated evenly.
Let it sit for 5 minutes.
Step 2: Cook the Paneer
Heat 1 tsp olive oil in a non-stick pan.
Add the marinated paneer and cook for 3–4 minutes, turning occasionally until lightly golden and slightly smoky.
Remove from the pan and keep aside.
Step 3: Prepare the Vegetables
In the same pan, lightly sauté:
Cook for 1–2 minutes until slightly tender but still crunchy.
Add grated carrot and cabbage, then switch off the heat.
Mix in chopped coriander.
Step 4: Make the Creamy Frankie Sauce
In a small bowl, whisk together:
- Thick curd
- Mint chutney
- Lemon juice
- Salt and pepper
This gives the frankie a creamy, tangy flavour without mayonnaise.
Step 5: Warm the Rotis
Heat the rotis on a tawa for 20–30 seconds on each side.
Brush lightly with ghee or olive oil for a softer texture.
Step 6: Assemble the Frankie
Place a warm roti on a plate.
Spread 1–2 tbsp of the yoghurt sauce.
Add:
- Sautéed vegetables
- Cooked paneer
Sprinkle with chaat masala and chilli flakes.
Roll tightly like a wrap.
Toast the rolled frankie in the pan for 1 minute until slightly crisp.
